I went last year and spent 5 days there, very nice city. There are plenty of trips available (see your hotel or leaflets) i would say take a trip to Whistler on a greyhound bus if you like to ski they do a ticket that includes all of this, bus travel, ski hire and ski pass. Also Victoria is lovely the gardens are also very nice like like the other answer suggests. There's loads of great places to eat and drink, depending on how much time and money you have, i would look at going to Lake Louise there are so many places on route, or hire a car and go the other way into the states and visit Mt Helens and Seattle.

go to granville island market and spend a few hours then jump on a small ferry (about $2.50) and cross false creek to the sunset beach seawall and walk around stanley park on the same wall...a beautiful trip...the seawall is about 9 km long but if you tire you can simply cut through one of the trails in the park

Definitely walk or ride a bike along the sea wall...and take a stroll in Stanley park.

Commercial Drive has all kinds of cute shops and ethnic restaurants, and one fancy sex-toy shop...

It is an awesome place...have fun!

bcorran is right. Granville Island is cool if you or your travelling partners like farmers markets, crafts, theatre or take a side trip to Whistler/Blackcomb, great any time of year.
